Traditional Chinioti Mutton Kunna Recipe


Mutton Kunna is a slow-cooked Punjabi dish traditionally made in a clay pot (kunna). The meat becomes very tender and the gravy is rich, spicy, and aromatic.


Ingredients — serves 4–5

1 kg mutton, preferably shoulder/leg pieces with some bone

150–200 ml cooking oil or ghee

2 medium onions, finely sliced

2 tbsp ginger-garlic paste

2 cups plain yogurt, beaten

2–3 green chilies, slit

2–3 tbsp wheat flour

1½–2 tsp salt, or to taste

2 tsp red chili powder

1 tsp Kashmiri chili powder

1 tsp turmeric

2 tsp coriander powder

1 tsp cumin powder

1 tsp black pepper powder

½ tsp garam masala

1 tsp crushed dried fenugreek leaves (kasuri methi), optional

2–3 cups water, as needed

Fresh coriander for garnish

Whole spices

2 bay leaves

1 black cardamom

4 green cardamoms

5–6 cloves

1 small cinnamon stick

1 tsp cumin seeds

6–8 black peppercorns

Method

1. Prepare the mutton


Wash and drain 1 kg mutton well. For the most flavorful Kunna, use pieces containing bone and a little fat.


Mix the mutton with:


1 tbsp ginger-garlic paste

1 tsp red chili powder

½ tsp turmeric

1 tsp coriander powder

½ tsp salt


Let it sit for 20–30 minutes.


2. Fry the onions


Heat the oil or ghee in a heavy-bottomed pot.


Add the sliced onions and fry on medium heat until deep golden brown.


Don't burn them—the onions should be properly caramelized because they give the gravy its color and depth.


Remove about half of the fried onions and keep them aside.


3. Add whole spices


Into the remaining onions and oil, add:


cumin seeds

bay leaves

black cardamom

green cardamoms

cloves

cinnamon

black peppercorns


Fry for about 30–45 seconds until fragrant.


4. Cook the mutton


Add the marinated mutton.


Cook on medium-high heat for 8–10 minutes, stirring frequently.


The meat should change color and begin to brown.


Add the remaining ginger-garlic paste and cook for another 2–3 minutes.


5. Add powdered spices


Add:


remaining red chili powder

Kashmiri chili powder

remaining coriander powder

cumin powder

turmeric

salt


Add a small splash of water so the spices don't burn.


Cook for 3–5 minutes.


6. Add yogurt


Lower the heat.


Add the beaten yogurt gradually, stirring continuously.


This is important because adding cold yogurt all at once over high heat can make it split.


Cook for about 7–10 minutes, stirring until the oil begins to separate from the masala.


7. Slow-cook the mutton


Add approximately 2–3 cups hot water.


Cover the pot and cook on very low heat for approximately 60–90 minutes, depending on the mutton.


The meat should become very tender.


If using a traditional clay kunna, cook it slowly over low heat. The traditional slow cooking gives the dish its characteristic flavor.


8. Make the Kunna gravy thick


Mix 2–3 tbsp wheat flour with about ½ cup water to make a completely smooth slurry.


Slowly pour it into the curry while stirring.


Cook for another 8–12 minutes.


The gravy should become thick and glossy, rather than watery.


Don't add all the flour at once—you can always add more if necessary.


9. Final seasoning


Add:


black pepper

garam masala

crushed kasuri methi, if using

slit green chilies


Simmer for another 5 minutes.


Taste and adjust salt and chili.


10. Rest the Kunna


Turn off the heat and let the Kunna rest, covered, for 10–15 minutes.


Garnish with fresh coriander and the reserved fried onions.
