  Traditional Pakistani Sheer Khurma Recipe


Sheer Khurma is a rich Eid dessert made with milk, vermicelli (seviyan), dates, nuts, and cardamom. This version is creamy, fragrant, and full of nuts without becoming overly sweet.


Ingredients

For the milk

1 liter full-fat milk

½ cup sugar, adjust to taste

4–5 green cardamom pods

2 tbsp milk powder, optional

2 tbsp cream, optional

1 tsp kewra water, optional

A few strands of saffron, optional

For the seviyan

½ cup fine vermicelli/seviyan

2 tbsp ghee

Dry fruits

2 tbsp almonds, thinly sliced

2 tbsp pistachios, thinly sliced

2 tbsp cashews, chopped

2 tbsp raisins

4–5 dates/khajoor, finely chopped

2 tbsp dried coconut, thinly sliced, optional

1–2 tbsp chironji/charoli, optional

Step 1: Prepare the dry fruits

Remove the seeds from the dates.

Cut the dates into small pieces.

Slice the almonds and pistachios.

Chop the cashews.

Keep all the dry fruits separately.


If your raisins or dates are very dry, soak them in a little warm water for 5–10 minutes, then drain.


Step 2: Fry the nuts

Heat 1 tbsp ghee in a heavy-bottomed pan.

Add the almonds and cashews.

Fry on low heat for about 1–2 minutes.

Add pistachios.

Fry briefly until the nuts become lightly golden.

Remove them from the pan and keep aside.


Don't over-fry the nuts. They continue cooking from their own heat and can become bitter.


Step 3: Fry the dates and raisins


Add another small amount of ghee to the same pan.


Add the chopped dates.

Fry for about 30–60 seconds.

Add raisins.

Stir briefly.

Remove them and keep aside.


You don't want the dates to become hard or caramelized.


Step 4: Roast the seviyan


This is one of the most important steps.


Add 1 tbsp ghee to the pan.

Add ½ cup fine seviyan.

Keep the flame low.

Stir continuously.

Roast for approximately 2–4 minutes.


The seviyan should become light golden and fragrant.


Don't let it become dark brown, because burnt seviyan will make the sheer khurma bitter.


If you're using pre-roasted seviyan, roast it only briefly or skip this step.


Step 5: Heat the milk

Pour 1 liter full-fat milk into a separate heavy-bottomed pot.

Bring it to a boil over medium heat.

Once it boils, reduce the flame to low.

Add the lightly crushed cardamom pods.


Let the milk simmer for about 5–10 minutes.


Step 6: Add the seviyan

Slowly add the roasted seviyan to the hot milk.

Stir continuously while adding it so it doesn't form clumps.

Cook on low heat for approximately 5–8 minutes.


Fine seviyan cooks very quickly, so don't overcook it.


The vermicelli should be soft but still slightly visible, not completely dissolved.


Step 7: Add sugar


Add ½ cup sugar.


Stir until completely dissolved.


Cook for another 3–5 minutes.


Taste it at this point. If you like sweeter sheer khurma, add another 1–2 tablespoons of sugar.


Remember that the dates and raisins will also add sweetness.


Step 8: Add milk powder


For a thick, creamy Eid-style sheer khurma:


Mix 2 tbsp milk powder with a little warm milk in a bowl.

Stir until smooth.

Add it to the pot.

Mix thoroughly.

Cook for another 3–4 minutes.


This step is optional but gives a lovely richness.


Step 9: Add cream


For an extra-rich version, add 2 tbsp cream.


Stir gently and cook for about 2 minutes.


Don't boil it aggressively after adding cream.


Step 10: Add the dry fruits


Now add:


Fried almonds

Pistachios

Cashews

Dates

Raisins

Coconut, if using

Chironji, if using


Reserve some for decoration.


Mix everything gently.


Step 11: Add saffron and kewra


If using saffron:


Soak a few strands in 1 tbsp warm milk for about 5–10 minutes.

Add it to the sheer khurma.


Turn the heat to very low.


Finally, add ½–1 tsp kewra water.


Don't use too much kewra because its fragrance can become overpowering.


Step 12: Final cooking


Cook everything together for another 2–3 minutes.


Then turn off the heat.


The sheer khurma should still look slightly loose at this stage.


As it cools, the seviyan absorbs more milk and it becomes thicker.


Eid-Style Finishing


Transfer the sheer khurma into a serving dish.


Decorate with:


Sliced almonds

Pistachios

Chopped dates

A few raisins

Saffron strands

A little coconut


Let it sit for 10–15 minutes before serving.


Serve it hot or cold?


Both are delicious:


Warm: creamier and more flowing.

Chilled: thicker and richer.

Room temperature: probably the best balance for Eid serving.


If refrigerating, remember that it will become considerably thicker. Add a little warm milk when reheating if necessary.


 Best ratio to remember


For a balanced batch:


1 liter milk + ½ cup seviyan + ½ cup sugar + 2 tbsp ghee + plenty of nuts/dates


For extra-rich Pakistani wedding/Eid-style sheer khurma, use full-fat milk, milk powder, a little cream, plenty of dates and nuts, and cook the milk gently rather than trying to thicken it quickly.
